The dishes made with Hokkaido ingredients were delicious, but many of the dishes were a bit too salty and oily.

The course of 7 dishes + focaccia + dessert was satisfying.
Many ingredients from Hokkaido are used.
When I went, the following dishes were served, but since it’s chef’s choice, I think it varies depending on the day.
Focaccia
Served warm. Even though it’s focaccia, it’s very fluffy and soft.
Prosciutto consommé soup
It’s unusual as it’s a Prosciutto ham consommé. The flavor is stronger than regular consommé soup.
Prosciutto and Okoppe milk mozzarella cheese *Okoppe= town in Hokkaido
This may have been the most delicious!!
The mozzarella cheese in particular was the most delicious I’ve ever had, so if you see Okoppe Milk’s mozzarella cheese somewhere, you should buy it.
It also went great with the prosciutto.

Marinated sardines from Yoichi *Yoichi = town in Hokkaido
The sardines are from Yoichi, Hokkaido. There’s no fishy smell at all, and I think they use fresh sardines.
Ashoro Cheese Factory cheese and Japanese yam fritto *Ashoro = town in Hokkaido
Is this the correct color? I felt like it was a little overcooked.
However, the taste is made from grilled cheese and Japanese yam, so there’s no way it wouldn’t be delicious.
The cheese was rich but went well with the smooth yam.
Wassamu cabbage under winter snow and dried mullet roe pasta *Wassamu = town in Hokkaido
It’s a luxury.
There is also plenty of mullet. Cabbage is stored under snow. It can be found in supermarkets in Hokkaido, and it is sweeter than regular cabbage.
The pasta was thick noodles, but al dente and filling.
Aibetsu Maitake mushroom and Tomakomai surf clam risotto *Aibetsu and Tomakomai = towns in Hokkaido
There are a lot of surf clams in it, but I think they are fresh and not fishy.
Aibetsu Maitake is a very large and sturdy Maitake, but it didn’t have much of a Maitake feel to it. This risotto was also rich and had a strong taste.
Burdock and beef …I forget the name of the dish
The burdock was especially delicious! It has a soft finish.
According to the chef, it took 3 hours to prepare. The beef was delicious as it looked, but it was a little too salty and oily for me.
Panna cotta and haskap sorbet
Refreshing haskap sorbet and smooth panna cotta that you can enjoy even after a big meal. Haskap is a fruit from Hokkaido that has a sour taste and is perfect as an after-dinner dessert.
My companion ordered a Catalana. It was delicious, but it was so hard that I couldn’t put a fork into it. Anyway, it was a very dense dessert.
